ActuPondy met Mrs. Lourdes Tirouvanziam-Louis to know more about the new coming out :
'Cuisine traditionnelle de Pondichery' : « Traditional Pondicherry  cookery »

Cuisine traditionnelle de PondichéryThis is a 500 page cookbook that will be presented by Mrs. Lourdes Tirouvanziam-Louis at the Alliance Française  Auditorium  on Thursday, 16th December at 6pm.

The first version of the book, published in 2003  met with an immense success, thousand copies were sold in less than three months.

Indians settled in France who had the occasion of perusing the book expressed their satisfaction on having a culinary guide that was unique in its kind. Their encouragement led Lourdes Tirouvanziam - Louis to bring out a second edition of the book enriched with a greater number of recipes and illustrations.

The French version is right now available, the Tamil book will be launched in January 2011 - after Pongal. An English version will hopefully appear soon.

Lourdes Tirouvanziam - Louis, PondichéryLourdes Tirouvanziam - Louis was born in Vietnam, her father was Tamil and her mother Vietnamese; Lourdes came to Pondicherry at the age of three and was brought up in this town. She holds a Masters in French, a Masters in English, and a Ph.D.in Socio- Linguistics. She taught English in Pondicherry at the Lycee Francais - a French High School, run by the French Government. She has been awarded the Chevalier des Palmes Academiques by the French Government. After retiring from a long teaching career, she devotes her time to various activities and writes cookbooks.

It has her taken three years to compile these lost and forgotten recipes buried in manuscripts, as most recipes are transmited oraly.

The rededition of the book « Cuisine traditionnelle de Pondichéry » has more than 400 recipes culled from Pondicherry and Karaikal families. These recipes are based on the nutritive and medicinale values of food based on Ayurveda.

Each recipe has being tested before jotted down.

Interesting details on spices, condiments, vegetarian recipes,  non-vegetarien recipes, seafood recipes and desserts unique to the Pondicherry are in the book. It also has an original touch - no photographs, all illustrations have been drawn - linear drawing - in black and white by upcoming local artists. Indegenous vegetables, traditional utensils, measures, weight (paddy, maganni, ajjaku)  traditional stone grinders (ammi, ropu ural, ropu edram),  traditional trays ( moram), baskets (kuday) have been drawn for posterity.
